Asian Style Salmon Salad

Want a healthy fish course with lots of flavours? This is it, inspired by some Asian flavours. 🙂

Ingredients:

600-800g Salmon fillet
1 Cauliflower
1 Broccoli
1 Red Onion
2 Heart Salads
3 Carrots
1/2 tsp Curry Powder
Salt
Pepper
Lime
Feta cheese (optional)

Marinade:

1 dl Soy Sauce
0,5 tbs freshly grated Ginger
3 Cloves of Garlic
1 Red Chili Pepper

Preparation:

Finely chop garlic and chili pepper. Grate the ginger and mix everything with the soy sauce. Rinse the fish fillets in cold water and carefully dry them with a clean towel or paper. Marinate the fish while you prepare the rest.

Grate cauliflower into a bowl. Add curry powder and a pinch of salt and pepper.

Slice carrot, cut broccoli, and roughly chop the onion.

Heat a skillet to medium and roast the fish with the marinade until warm. Common mistake while preparing fish is to overcook it, so try to be careful. 🙂 Let the fish rest a bit while you sautee the vegetables in some oil.

Start plating with the Heart Salad, and add vegetables and fish on top. Put the grated cauliflower around the plate, and add some feta if you like. Squeeze lime juice over and serve.
