Smoked Salmon with Broccoli Cream

Time for more fish, and this time I will be smoking something. Yay!

Ingredients:

400g Salmon fillets
1/2 Broccoli
Whole Milk
Butter
0,2 Red Chili Pepper
0,2 White Onion
Apple Cider Vinegar
0,25 Cucumber
0,25 Green Apple
Wood chips (Hickory etc)
Salt
Pepper
Kayenne

Preparations:

The very first thing to do, make sure you have soaked the wood chips at least 1 hour in advance if you are gonna smoke.

First, as always, rinse the fish in cold water and dry with some paper towels. Season with salt and pepper. Put the wood chips on the bottom of a roasting tray, and put a grating over.

Put the fish on the grating and cover the whole tray with tin foil, making sure it’s tight and closed. Pre-heat grill or oven to 175-200 degrees. Place the tray directly over the heat and let it work its magic for 20-30 minutes.

Peel and cut onion, apple, and cucumber into strips. Finely chop the chili. Poor some vinegar over the onion and let it marinate for 5-10 minutes.

Rinse and cut broccoli into chunks and boil until tender. Drain all the water, and let it rest for 5 minutes to steam off any remaining water.

In a food processor etc, blend with milk and butter until you have desired texture. Season with salt and kayenne pepper.

When the fish is done, plate up everything and enjoy.
