Smoke and Herb Salt

It’s that time of year where your herbs are just exploding. It’s really hard or nearly impossible to keep up with the growth factor of these beasts during this season. What should you do? Use everything and end up ruining your dishes? Throw them away? No, let’s make an infused salt with them!

I found my thyme becoming out of control, so I trimmed it and got an idea. Why not add the extra thyme to sea salt, and smoke it? So it happened.

I bought this kitchen toy a few months ago, and I must say it is cool to smoke stuff fast and easy. However, the smoke flavour must not be compared to a real smoker used for meat/fish etc. This is real smoke flavour, but only on the surface of stuff. It works really well with small stuff, not so good on larger stuff.  PS: I bought it myself and I am not promoting this for Polyscience or anyone else.

Finely chop the thyme (this would work well with rosemary as well), and add to sea salt. If you don’t have a smoking gun or smoker, don’t worry. The salt will be delicious without as well. 🙂 If you have one, smoke and let it sit until smoke is absorbed.

Nothing wasted, and you got an awesome salt to use. 🙂 Store in a dry, cool place in an airtight container.
