Success Tart

Wow, this cake is always such a winner! My mum introduced me to it and I started making it myself a few years ago. It has never let me down and I never get tired of it! Few ingredients, but oh my do they shine together. 😀 Get ready for an epic cake that you can impress friends, family or colleagues with.  A real classic!

Serving size: 1-2 pers (1 for me  🙂 ) 10 cm spring fan form

Ingredients:

Cake bottom:

1 egg white
40g powdered sugar
40g almonds, finely chopped/milled

Topping/cream:

1 egg yolk
0,3 dl whipping cream
30g sugar
0,25 tsp vanilla sugar
40g tempered butter

Preparations:

Cake bottom:

Mix all ingredients together into a batter. Butter a small springform pan and transfer the batter into it. Cook in the oven for 25-30 minutes on 160 degrees C. Allow to cool down.

Topping/cream:

Gently heat egg yolk, cream, sugar and vanilla in a sauce pan, but be very careful with the heat. Keep stirring and adding heat until it is getting thicker. Do not exceed 82 degrees C. Allow to cool down completely. Once it is nice and cool, add the tempered butter and mix.

Add the topping to the cake while in the form, and set it in the fridge to chill for a few hours or over night. Enjoy! =)
