Cauliflower Cheddar Sticks

Cauliflower + Bacon = TRUE! Try this amazing dish as an appetizer or as a fantastic snack.

Ingredients:

1 head of cauliflower with leaves
150g bacon
2 tbs butter
2 tbs double cream
1 dl of shredded cheddar
4 egg whites
Salt
Pepper
Sugar peas
Iceberg
Red bell pepper

Preparation:

Cut cauliflower into smaller pieces and boil in water together with the leaves until tender. Drain the water and mix together with the cheddar. You don’t have to blend until it’s smooth, just give it a good mix. Wait with the seasoning. Chill the mix in the fridge for 30 mins.

Roast bacon in a roasting pan and let them rest on a sheet of paper etc to get the excess fat out.

Whip the egg whites until you get a stiff peak. Crumble the bacon in the cauliflower mix first, season with salt and pepper. Add butter and cream, mix well. Then add 1/3 of the egg whites to the mix. Mix gently, but thorough before you add the rest of the egg whites. Chill for another 30 minutes in the fridge. You don’t have to, but for best results I strongly
recommend it.

When you are waiting for the mixture to chill, prepare a simple salad. I used sugar peas, red bell peppers and iceberg.

Now, over to the fun part, roasting and frying! 🙂 Heat your oven to about 190 degrees C. Put the mixture in a pastry bag and cut one corner of it. Spray the sticks on a baking tray and roast them for 10 minutes. Be aware, they will be very soft and fragile until they are fried.

Heat oil in a sauce pan etc and fry them until brown golden. Let them rest on a sheet of paper. Plate up and sprinkle some salt over. You can garnish with some herbs, f.ex. chives, coriander etc.
