Allright, time for a new main course. This time I combine pork with spicy pork with a lot of fresh and tasty vegetables. Enjoy!

Ingredients:
300g pork filet
300g chorizo
1/2 white onion
1/2 lime
1 red chili
150g asparagus
1 red bell pepper
1/2 swede
2 cloves of garlic
Olive oil
Salt
Pepper
Preparation:
Peel the swede and cut into cubes. Bring a pot with water to boil and boil the swede until just tender. Drain the water.
Cut all the vegetables into cubesize. Chop the garlic in small slices.
Give the pork filet a quick rinse in cold water and cut into strips. Peel the chorizo and crumble it.
Heat olive oil in a frying pan, and roast the pork until it gets some color. Use medium/high heat and make sure you don’t roast too long, we don’t want dry meat. 🙂 Let the pork rest on a plate.
In the same pan, roast the swede a couple of minutes.
Add crumbled chorizo. We want to get the tasty fat out of the chorizo and into our vegetables.
When the chorizo is cooked through, add the rest of the vegetables. Roast until everything is warmed properly.
Use limejuice and salt/pepper to taste.
