Pork and friends

Imagination is very important in the kitchen. This also applies to being able to try out new combinations without the fear of failure. This can be very useful if you have goods in your fridge you don’t have a specific plan for. This weeks recipe is just that, a challenge to make something good out of what I have in my fridge.

Ingredients: 

300-400g minced pork
2 carrots
1 leek
1 can chickpeas
1 tomato
1/2 lime
1 clove garlic
2 tbs greek yoghurt (or quark, sour cream, crème fraîche)
3-4 ss olive oil
1 ts cumin
1 ts garam masala
Salt
Black pepper

Preparation:

Rinse and peel the carrots. Rinse the other vegetables (tip for rinsing leek). Cut them into suitable pieces finely chop the garlic.

Heat olive oil in a frying pan. Roast the minced meat together with garlic and carrots. Add garam masala and cumin.

Add the other vegetables and roast quick until they are warm all the way trough. Taste with salt, black pepper and lime juice.

Add a tablespoon of greek yoghurt on the top before you serve. If you want the dish to be a bit hotter, you can add red chili.
