Roasted salmon with crème fraîche and dill

Christmas has passed and maybe you want to start fresh with some healty and fresh food? This dish might help you back at the right track.

Ingredients:

400g fillet of salmon
2 potatoes
Salad mix/lettuce
Pink pepper
Salt
1/2 lemon
2 twigs of dill
1,5 dl crème fraîche

Preparation:

Boil potatoes in water until tender.

Rinse the salmon fillets in cold water and dry.

Rinse and dry dill. Chop it gently and add to crème fraîche, mix well. If you want to get the most flavor out of it, use a blender. This adds a very nice color to the crème fraîche as well. Taste with lemon juice and salt.

Crush pink pepper with a mortar and pestle, or use the underside of a frying pan.

Spice the fish with salt and crushed pink pepper.

Roast the fish in a frying pan on medium to high heat. Serve with potates, dill-crème and salad.
