Dessert Chimichangas

OK, time for a new dessert! If you like apple cake, you just have to try this recipe. It’s full of sweet and tasty flavors.

Ingredients:

Apple sauce:

2 apples
1,75 dl water
0,3 dl cornstarch (Maizena)
Seeds from 1/2 vanilla bean
0,75 dl granulated sugar
1/2 tsp cinnamon
2 tsp lemon juice
Pinch of salt

4 small tortillas (i prefer corn over wheat, but that’s up to you)
Granulated sugar
Cinnamon
Oil for frying

Preparation:

Peel and cut the apples into small cubes.

Mix the dry ingredients first, including the seeds from the vanilla bean. Add the water and bring up to a boil. Cook a few minutes until the mixture is getting thick.

Add the apple cubes and cook until they are almost tender. This may take 10-20 minutes depending on the size of the cubes. Let the mixture cool before you continue.

When the mixture finally has cooled, spoon a decent amount in the middle on a tortilla. Wrap the ends in and roll it. Heat frying oil in a roasting pan to about 150-160 degreees C. Fry the chimichangas one side at the time until they have nice color.

Mix sugar and cinnamon on a plate. Roll the fried chimichangas in the mixture to get a nice coating.

Let them cool a bit before you serve. They can be reheated for later use as well. 🙂 They can be served alone, or with a scoop of vanilla ice cream. Enjoy this exciting dessert!
