With spring just around the corner I wanted to make something that reminds more of summer than winter. Who doesn’t love a good chicken salad? Fresh, tasty and easy to make. Let’s get started, shall we?
Serving size: 3-4 pers

300g chicken breast
150 pasta (choose your favorite)
2,5 dl Crème Fraîche
1 tsp Dijon Mustard
Olive oil/Extra virgin
1 Red Bell Pepper
1 Big Carrot
1 clove Garlic
Bring salted water to boil in a pan and cook the pasta until it’s al dente. Rinse it in cold water and let it rest.
Chop tomatoes and bell pepper and put them into a bowl. Peel carrot and parsnip, but don’t chop them! We will use the peeler to create nice strips of vegetables that will give lots of flavor. So go ahead and create some nice strips and put them in the bowl.
Wash and cut the chicken breasts into small strips. Heat oil in a skillet and roast until the chicken gets a golden color. Set the chicken aside, and let it rest.
Finely chop garlic and add to the Crème Fraîche together with dijon mustard, extra virgin oil, salt and pepper. If you want something exciting as well, try with some mint leaves. 🙂
Allright, mix everything in the bowl and serve chilled. Enjoy!
