BBQ Pork Fillet

Time for some marinated Pork! Of course, straight from the grill. The sun is shining and I just love that smokey flavor. Fire in the hole! 🙂

Ingredients:

500g Pork Fillet
1/2 Cauliflower
Milk
2 Corn on the cob
1 tbs Pineapple Juice
1 tsp Chili
0,5 tsp Cumin
3 tsp Smoked Paprika
2 tbs Balsamico Vinegar
70 ml Tomato Ketchup
1 tsp Dijon Mustard
1 Clove Garlic
Black Pepper
Salt
1/4 tsp Curry
Skewers

Preparations:

Start with the marinade. Finely chop garlic and mix with all the spices. Add ketchup, mustard and balsamico and stir well. Don’t forget to add that pineapple juice. Adjust heat with the amount of Chili.

Wash the pork fillet with cold water. Season with salt and pepper. Chop the fillet into big chunks and add to the marinade for at least 1 hour. The longer you let it marinade, the more taste!

While marinating the meat, we can start to make something out of the cauliflower. Wash it, cut it and boil it together with the leaves and some curry. When it’s tender, drain it. Use a mixer and blend until smooth while adding milk to the mixture. Salt and pepper to taste.

Give the corn a quick rinse and use plenty of salt on them.

When the pork has finished marinating, place the chunks on some skewers. This will make the job easier turning and grilling the meat.

Use high heat to sear the outside, than medium/low heat when you have some color on them. Let them cook for 10-20 minutes, depending on the chunk size.

Cook the corn on the grill why you are waiting for the pork to cook through.
